The name of the app Merlin was talking about in the #86 AD is "Sleep Cycle." If you don't mind keeping your phone or iPod Touch under your sheets while charging, warming your head with gentle iRadiation, it does really work well, not only with tracking your sleep but with waking you up when you actually have the best chance of waking up.

Another similar app is MotionX Sleep, whci came recommended by Andy Ihnatko on MacBreak Weekly, and it's also a pedometer. (Yeah, I know that's two very at-odds features in an app.) I've used both, but I think MotionX Sleep did a better job of waking me.
Thanks for the tip -- as I've now automated my barely concious mind to occasionally disable the alarm, a change-up could be really good for me.
